Make these ahead, and flavor them when you reheat them! Quick! Easy! Efficient!
Ingredients
| 1 | lb | grassfed beef, ground (I choose Beyond Organic Ground Beef - its perfect for this recipe and SO good!) |
| 1 | egg (well beaten. If it is a large egg, use half.) | |
| 1⁄3 | c | almond meal (Alternately I use crushed walnuts) |
| 1⁄2 | t | sea salt |
| 1⁄2 | t | black pepper, fresh cracked |
Notes
After baking, eat with the sauce of your choice, add to marinara sauces, or store in the fridge or freezer. I like to make meatballs ahead and add to them all sorts of things - soups, different sauces, the possibilities are endless. And sometimes I eat them cold right out of the fridge! Of course they're really good put into squashes like the Halloween Faux Monkey Brains recipe (use the variation on that page though, for bigger meatballs) and the Faux Meatball Sub!
Instructions
Breadcrumbs are for the birds..........
Preheat Oven to 350 Degrees Fahrenheit. Mix all ingredients throughly (I usually wash my hands VERY well and use them!) and form into 11-12 little round meatballs. Place on a cookie sheet and bake for approx 15-20 minutes depending on your oven and how you like your meatballs. At the very least, make sure the internal temperature reaches 145. Food thermometer.... it is your friend.
You can also make these with a little Italian spice blend to have a fun way for people to try your Beyond Organic Green Fed Ground Beef at promo parties or whatever.
